I have really become very lax in blogging the past 6 months or so. I feel terrible about this. I really want to be a “blogger” but my life has been full. I am struggling with the decision on to stop my blog or not. I will continue to think on this as I do not want to make a hasty decision. Perhaps I will only blog monthly. I am looking forward to any feedback you may have for me.

I think spring is FINALLY in the first here in Western New York.   It was a cold brutal winter and I look forward to Warner days. That is probably one of the reasons I am so excited about Easter this year.
In general I am not a holiday person. I believe that has more to do with not having children than I care to admit….until now. I am looking at this as a celebration of Spring and ask that brings. I have a delicious meal planned for the two of us.
After a 1 1/2 hour hunt for a ham for two people I refused to accept failure–I was not willing to spend $8 on said ham. I settled on a 7 lb spiral ham. Talk about leftovers. Ham in hand I headed home to decide the menu and this is what was decided on:

Spiral Ham
Parmesan Smashed Potatoes
Bacon & Shallot Green Beans
Roasted Spaghetti Squash
Beets & Horseradish
Purple Eggs (pickled)
Pumpernickel Bread
Cupcakes with Chocolate Frosting
Raspberry Jello with whipped topping

Wonder if I have enough food….lol

I came to the realization that I have spent little time on learning to Crochet. After thinking on this a bit I learned something….I am too tough on myself. I wanted to learn new things and that spiraled out of control. I was trying to do too much. So I decided that if the only be thing I work on for this year is Crocheting that is okay with me. So I gathered my supplies and will be spending time learning this weekend. Mid May I have a meet up with needle crafters. I am looking very forward to this.
I also learned that trying new things whenever the opportunity arises is my new look on life. I feel like I didn’t pay off the day spring cleaning my mind. lol I feel recharged and refreshed.

Wow was I surprised on how much I liked it…in fact I made it twice.

Today I decided to create my own and here is the result of that fun time in the kitchen today:

1 can Garbanzo beans

2 packets of Justin’s Almond Butter

1/8 teaspoon  Sea Salt

3 Tablespoons Agave

1/2 teaspoon Pure Almond Extract         * Next time I would reduce to 1/4 teaspoon

1 1/2 tsp Pure Vanilla                             * Next time I would increase to 1 3/4 teaspoon

1 Tablespoon Vanilla Almond Milk

1/3 Cup Chocolate Chunks

Remove skins from the beans

Put them in food processor and pulse until fine in texture

add all remaining ingredients  minus the chocolate chunks into food processor

Pulse until well blended

Transfer to a bowl and mix in the chocolate chunks (more or less to taste)

After I put this in the fridge to chill for an hour I made a cup of tea. In fact it is the tea that helped inspire this recipe. It is one of my top favorite teas. I got the remainder of my  inspiration from a friend that thought almond butter would be a great addition.

Almond Ode To Joy Tea

Nothing left to do but pour a spot of tea and try my cookie dough…….I was pleasantly happy as it is reminiscent of an Almond Danish Ring. I will certainly make this again!!!

So while I was grocery shopping today I had the overwhelming urge to Bake something. I found myself remembering a cookie recipe I pinned. So I quick look up the ingredients and purchase what I needed.
Once the groceries where put away I begin making cookies. The smell of graham crackers, chocolate, cinnamon and sugar are now permeating my home! One tray of cookies is already cooling and the other tray is in the oven. The recipe said 3 dozen and I actually got 3 dozen ( I never seen to get the same amount that the recipe says).
So do you want to know what kind of cookie I made…………………..I made S’mores Cookies! Mine do not look like the picture that accompanied the recipe. That’s okay as how they taste is more important in this house.

How awesome I have followers already and am still clueless. Guess I will have to spend some quality time learning about blogging now that I have an audience.
