I have really become very lax in blogging the past 6 months or so. I feel terrible about this. I really want to be a “blogger” but my life has been full. I am struggling with the decision on to stop my blog or not. I will continue to think on this as I do not want to make a hasty decision. Perhaps I will only blog monthly. I am looking forward to any feedback you may have for me.

I think spring is FINALLY in the first here in Western New York.   It was a cold brutal winter and I look forward to Warner days. That is probably one of the reasons I am so excited about Easter this year.
In general I am not a holiday person. I believe that has more to do with not having children than I care to admit….until now. I am looking at this as a celebration of Spring and ask that brings. I have a delicious meal planned for the two of us.
After a 1 1/2 hour hunt for a ham for two people I refused to accept failure–I was not willing to spend $8 on said ham. I settled on a 7 lb spiral ham. Talk about leftovers. Ham in hand I headed home to decide the menu and this is what was decided on:

Spiral Ham
Parmesan Smashed Potatoes
Bacon & Shallot Green Beans
Roasted Spaghetti Squash
Beets & Horseradish
Purple Eggs (pickled)
Pumpernickel Bread
Cupcakes with Chocolate Frosting
Raspberry Jello with whipped topping

Wonder if I have enough food….lol

I came to the realization that I have spent little time on learning to Crochet. After thinking on this a bit I learned something….I am too tough on myself. I wanted to learn new things and that spiraled out of control. I was trying to do too much. So I decided that if the only be thing I work on for this year is Crocheting that is okay with me. So I gathered my supplies and will be spending time learning this weekend. Mid May I have a meet up with needle crafters. I am looking very forward to this.
I also learned that trying new things whenever the opportunity arises is my new look on life. I feel like I didn’t pay off the day spring cleaning my mind. lol I feel recharged and refreshed.

The cookies are a huge fail for me. The first batch never formed into a dough. I thought I followed directions closely. Noted that maybe I did not cream until fluffy enough. So in the 2nd batch I Really made them fluffy. Thought I may have added the flour too quickly. So the second time I added only 1/4 cup at a time. Dough seemed to come together a bit until I added last 1/4 cup flour. Went right back to coarse crumbs. Switched from my kitchen aid stand mixer to my breville hand. mixer using the dough hook. Added tablespoons of water noticing it coming together. I went back to the kitchen aid adding more tablespoons of water. Finally emptied bowl onto floured surface attempting hand kneading. Rolled out terribly…sticking to rolling pin and surface no matter how much flour used. Tried a semi cooled cookie and wow is it ever tough.
So discouraging when this happens….and seeing I was so preoccupied by the cookies I failed to notice the time and realized just now I have nothing planned for dinner. Shit.
So I have terrible cookies, no idea for dinner and a dirty kitchen. However the sun is still shining!!!

Made a run to Joann’s for a couple yards of muslin, a flower cookie cutter and some pink fabric. I stopped at Starbucks on the way home…for a Trenta Orange Spiced Iced Coffee. Anyone available in a bit to scrap me off the ceiling as I already have had a large coffee and a Grande Iced Skinny Vanilla Macchiato but one  needs fuel for cookie baking and sewing today.

I am making this cookie recipe[e I came across yesterday: http://bakingbites.com/2014/03/thick-cut-out-sugar-cookies/   Seriously a sugar cookie that does not require refrigeration. I am totally there. I will also be working on making another Comfort Pillow this time making some alterations to the original directions. I will also be adding some lavender to it. This is for my niece Anna. I think every girl/woman needs one of these for that time of the month. sewing, menses,

I have been a busy lady today. Had my hair trimmed, stopped and picked up donuts for breakfast (these are sooo worth the calories), went to the tea shop, stopped at the hobby store with My Love ( he is hugely into RC Cars) and finally stopped and picked up apples.
It is rather grey outside today so I decided to make a pork roast and applesauce. My Love will make his famous twice baked potatoes too. One of my happiest times is even we make a meal together.
BTW:  My Love is very happy with his blanket…which makes me smile!!!

I had a very productive evening. I recut and actually completed this Wolf Blanket for my husband. Just in time too as it is suppose to get colder….again.

I made Garbanzo Bean  soup this evening. It taste just like hummus. I am completely hooked. This could possibly bee my go to meal for when My Love is not home on Fridays. I had this made in just a half hour.
I also started a comfort pillow to give as a gift. Now I just need to give flaxseed to fill it so I can finish it up. I opted for flax seed as it holds heat longer than grain and will not give off a cooked grain odor after multiple uses.

I finally caught the cold that has been plaguing my community. This happened last Thursday. By Friday night I was miserable…it totally hit me like a brick wall. With so many plans for the weekend I tried numerous remedies. Tea,  Sudafed and Afrin gave absolutely zero relieve. I increased my water intake as I was feeling dehydrated…this helped a bit. The cinnamon honey remedy helped minimally. I finally located local raw honey and have been taking 2-3 teaspoons a day. I feel this has helped the most. My sense of taste and sense of smell are hit and miss. I heard/felt my stomach growl so coffee in hand I headed to the kitchen.
What to make? Banana Pancakes….2 ingredient pancakes. Truth be told I NEVER make pancakes (this is My Love’s  fortay). The only reason these popped in my head is that a co worker told me how her family likes them. So that settled that and off I went. These where very easily made. They were ok. I did not add the baking powder as many reviews suggested. I would definitely put the bp in next time because they kind tasted like banana eggs.
I took a PTO day today to get the rest  ( lol ) I need to continue to get better. In my efforts to rest I have put corned beef in the cockpot, have boneless chicken breast marinating, made a pot of Starbucks Breakfast Blend and turned on my iron to continue working on my current sewing project. I am so excited by what I am currently making I can barely contain my enthusiasm. I am hoping to complete the project today.
I also decided that for the month of March ever day I will take at least one picture of something. I will start posting these pictures every Wednesday!!!

I finished the infinity scarf first thing this morning. I started working on My Love’s jeans and just took a pan of these out of  the oven! Hope your making the most of today!

Wow was I surprised on how much I liked it…in fact I made it twice.

Today I decided to create my own and here is the result of that fun time in the kitchen today:

1 can Garbanzo beans

2 packets of Justin’s Almond Butter

1/8 teaspoon  Sea Salt

3 Tablespoons Agave

1/2 teaspoon Pure Almond Extract         * Next time I would reduce to 1/4 teaspoon

1 1/2 tsp Pure Vanilla                             * Next time I would increase to 1 3/4 teaspoon

1 Tablespoon Vanilla Almond Milk

1/3 Cup Chocolate Chunks

Remove skins from the beans

Put them in food processor and pulse until fine in texture

add all remaining ingredients  minus the chocolate chunks into food processor

Pulse until well blended

Transfer to a bowl and mix in the chocolate chunks (more or less to taste)

After I put this in the fridge to chill for an hour I made a cup of tea. In fact it is the tea that helped inspire this recipe. It is one of my top favorite teas. I got the remainder of my  inspiration from a friend that thought almond butter would be a great addition.

Nothing left to do but pour a spot of tea and try my cookie dough…….I was pleasantly happy as it is reminiscent of an Almond Danish Ring. I will certainly make this again!!!
